Gluten-Free Flour

Published by jsfarmer under Food News, Health, Recipes

In my ongoing obsession with trying to get gluten-free, I recently came across alternative flour sources via Natural Health Magazine, and I thought I would pass along some alternatives the magazine suggested.
Almond Flour: high in vitamin E and magnesium
Coconut Flour: high in protein and fiber
Chickpea Flour: rich in protein and iron
Hazelnut Flour: high in fiber [...]

Avocados: Full of Goodness

When you consider the fact that half an avocado contains 4.9G fiber, 354MG potassium, 15.3MCG vitamin K, 59MCG folate, 1.5G protein and 10.7G (good) fat, what’s not to like?
Creamy, buttery avocados get their taste and texture from good fats, those monounsaturated fats that help lower cholesterol.
Whether it’s the base for guacamole, or diced in a [...]

How to Make a Fried Egg Sandwich

Published by jsfarmer under Breakfast, Recipes

I’ve been making fried egg sandwiches for my husband almost every Saturday morning for the past two years–maybe more, I’ve lost count!
While I grew tired of them long ago, he still exclaims each time that they are the Best. Thing. Ever.
Here’s how to make one of your very own–you be the judge.
Ingredients:
Bread, English Muffin, Bagel*
Olive Oil
Butter, [...]

My Cooking Bible

Published by jsfarmer under Cookbooks, Recipes

When I got married, one of the gifts I received was the Better Homes and Gardens New Cook Book, Limited Edition. At the time, I thought, “How cute, a retro cook book!”
Little did I know just how handy it would be.
First of all, it’s spiral bound, so I can remove a page if I need to [...]

How to Make Lazy Lemonade

Published by jsfarmer under Recipes, Sacramento Co-Op, Shopping

As if I haven’t harped on Stevia enough already, there’s one more way I get a lot of mileage from my little Stevia bottle.
Rather than buy a bunch of lemons when I’m in the mood for fresh lemonade, I turn to ReaLemon, which is 100 percent lemon juice from concentrate. I get it at my [...]

Sweet + Salt = Yummy Kettle Corn

Speaking of sugar, there’s one item (besides baked goods) in which Stevia will not do, and that is the highly addictive phenomenon known as Kettle Corn.
If you’ve never before tried this sweet-and-salty popcorn made with granulated sugar, salt, and oil, walk–no, run!–to your nearest fair, amusement park or open air market, where you will most [...]

Sweet(ener) Low Down

If, when you think of sweeteners, immediately you start humming “Pour Some Sugar On Me”, you’re not alone.
Generally speaking, there are two types of sweeteners, nutritive and non-nutritive. Among the nutritive are sugar alcohols, honey, fruits, and syrups (including maple, sugar beet, corn, cane, golden, barley malt, Molasses, brown rice, and agave).
Non-nutritive sweeteners include Acesulfame [...]

How to Barbecue Corn On the Cob

Published by jsfarmer under BBQ, Recipes

Barbecuing corn takes patience and practice, but the end result, sweet, fresh, perfectly-done corn on the cob, is so worth the wait.
My husband has become a corn cooking master, and his secret is all in the ear rotation.
But I’ll get to that.
First, choose your ears by pulling back on each husk a bit, just enough [...]
