Gluten-Free Flour

Published by jsfarmer under Food News, Health, Recipes

In my ongoing obsession with trying to get gluten-free, I recently came across alternative flour sources via Natural Health Magazine, and I thought I would pass along some alternatives the magazine suggested.
Almond Flour: high in vitamin E and magnesium
Coconut Flour: high in protein and fiber
Chickpea Flour: rich in protein and iron

Eggs have been known to get a bad rap, as the cholesterol found in the yolks has been blamed for raising cholesterol levels in the body. Not so, says the American Journal of Clinical Nutrition, which recently found no link in healthy people between eggs and either heart disease or stroke.
In fact, eggs may even [...]

At Chicken Charlie’s food stands, fair-goers have their choice of deep-fried items for [...]

So Long Trans Fats in Calif.

Published by jsfarmer under Food News, Health, Restaurants

Beginning in early 2010, California will be the first state to ban restaurants from using trans fats, which have been linked to coronary heart disease, strokes, diabetes and obesity.
Gov. Arnold Schwarzenegger signed a new law, Assembly Bill 97, recently that directs restaurants to stop using trans fats by January 2010, and for bakeries to follow suit one year later. [...]

Gluten: Friend or Foe?

Published by jsfarmer under Food News, Food thoughts, Health

There’s been a lot of talk about gluten lately, and I know that reducing gluten intake is one of the goals in this book, but with all the talk, I still don’t understand what the big gluten deal is.
I know that those afflicted with celiac disease have gluten intolerance, but what does that mean exactly?
The short [...]

Sweet(ener) Low Down

If, when you think of sweeteners, immediately you start humming “Pour Some Sugar On Me”, you’re not alone.
Generally speaking, there are two types of sweeteners, nutritive and non-nutritive. Among the nutritive are sugar alcohols, honey, fruits, and syrups (including maple, sugar beet, corn, cane, golden, barley malt, Molasses, brown rice, and agave).
Non-nutritive sweeteners include Acesulfame [...]

Published by jsfarmer under Food News, Health

Just when you though it was safe to go back in the water…
Oh, wait. That’s another story entirely!
But fans of fresh tomatoes can now rejoice as the U.S. government declared late last week that tomatoes are back on the market.
That being said, an APB is still out on hot peppers, including fresh jalapenos and serranos, [...]
