How to Make a Fried Egg Sandwich

I’ve been making fried egg sandwiches for my husband almost every Saturday morning for the past two years–maybe more, I’ve lost count!

While I grew tired of them long ago, he still exclaims each time that they are the Best. Thing. Ever.

Here’s how to make one of your very own–you be the judge.

Ingredients:
Bread, English Muffin, Bagel*
Olive Oil
Butter, Soy Butter or Margarine**
Two eggs

* I use a fresh bagel
** I use Soy Butter

Instructions:
1. Start toasting bread of choice.
2. Heat a tablespoon of oil in frying pan, then crack two eggs into pan.
3. Cook eggs to preference (my husband likes his “seared”, so I cook them for a few minutes on medium on one side, leaving the yokes intact, then when bread is buttered, I flip them over just to sear the other side and serve).
4. Butter bread choice.
5. Layer bread, eggs, bread.

    Oh, dear. I really do miss having a fried egg with either dry toast. My favorite way, though, is to have eggs over-easy on hash browns.

    Did I mention that I REALLY miss eggs. :-)
