‘Shrooms: Chock Full Of Antioxidants

While all mushrooms are high in selenium, it appears that those who prefer their ‘shrooms of the mainstream variety (versus the more exotic, such as maitake or matsutake) aren’t missing out.

A new study in the Journal of the Science of Food and Agriculture deems button mushrooms nutritionally worthy. In fact, it appears that button mushroom contain significant levels of antioxidants. The body of the mushroom contains the most disease-fighting compounds, but even the stalks are good for ya.

To clean mushrooms, remove any residual soil by cleaning them with a soft brush or a damp paper towel. Then enjoy them raw (on salads or with dips) or cooked (sauteed with olive oil and garlic, perhaps?).
