Fun With Fennel
Fennel is one of those vegetables that, unless you know what you’re doing with it, the results can be, well, interesting, to say the least.
But fennel should not be overlooked, because it contains iron, calcium, folic acid, carotene and vitamin C. It may taste like licorice, but it’s actually a part of the parsley family.
A few years ago, I found a fennel recipe that is delicious, nutritious, and very easy.
Greens, Avocado and Fennel Salad
8 cups arugula (or spinach, if arugula is not available)
2 ripe avocados (halved, pitted, peeled and sliced)
2 tablespoons lemon juice
1 fennel bulb
2 tablespoons Olive Oil
Coarse salt and fresh ground pepper to taste
1. Wash and dry the greens, set aside.
2. Sprinkle avocado sliced with lemon juice. Remove and discard outer layer of fennel bulb and wash thoroughly. Quarter fennel bulb, remove core, and slice the remaining fennel as thinly as possible. Combine with avocado slices and toss.
3. When ready to serve, add greens, Olive Oil and season with salt and pepper. Toss and serve.
